(Prep Time: 10 minutes plus marinating 30 min - 2 hours), Total (Cooking) Time: 20 minutes.
4 garlic cloves, chopped
1/4 cup grainy mustard
3 tablespoons honey
1/4 cup Dijon mustard
3 tablespoons fresh oregano, chopped (or 1 teaspoon dry)
3 tablespoons fresh thyme, chopped (or 1 teaspoon dry)
a few twist of fresh ground sea salt
a few twists of fresh ground pepper
juice and zest from one lemon
1cup vegetable oil
4 small chicken breast, boneless and skinless
Combine all ingredients, except chicken, in a shallow bowl or large ziploc bag. Add chicken and let marinade at least 30 minutes or up to 2 hours.
Preheat oven to 400 degrees F.
Remove chicken from marinade and lay down on a foil lined baking sheet. Discard any remaining marinade. Cook chicken for 15 - 20 minutes until cooked through. Serve!
