The Kids and I Cook Udon Noodle Chicken Stirfry and We Need Your Votes!
That's the video the boys and I made together to enter the Hands On, Cook Off! contest and we need your votes! If you could head to the contest site here and give us your vote, we'd much appreciate it! As for the recipe? Here it is for you below!
Quick and Easy Udon Noodle and Chicken Stirfry
(Prep Time: 10 minutes/Total Time: 20 minutes. Serves 4)
Ingredients:
2 packages udon noodles (200 grams each)
1 tablespoon canola oil, divided
2 small chicken breasts, sliced thin
1/2 small green cabbage, shredded
1 red peppers, seeds removed and thinly sliced
1 cup broccoli cut into small pieces
3 tablespoons hoisin sauce
2 tablespoons soy sauce
Directions:
1. Cook the udon noodles in boiling water for 2 minutes then drain well. Set aside.
2. Heat a wok on high and add 1/2 tablespoon of oil when hot. Add chicken to wok, stirring occassionally, until cooked through . Remove chicken from the wok and set aside.
3. Add remaining oil and stir-fry cabbage, peppers and broccoli for 2 to 3 minutes.
4. Add hoisin and soy sauces and return chicken to the wok. Mix well then add noodles and stir-fry, tossing quickly, to heat through. Serve!
