We wanted rice crispie squares but I wanted to make them a little different than the original. This summer, we enjoyed our fair share of S'mores and I thought it might be fun to try and make a rice crispie version. A little chocolate coating with a few crumbled graham crackers mixed in seemed a good idea. The result? Excellent!
S'mores Rice Cereal Squares
(Makes one 8 x 8 pan of squares)
Ingredients:
½ teaspoon vanilla
¼ cup butter
34 large marshmallows (about 1/2 bag)
3 cups rice cereal
1 cup graham crackers broken into small pieces
1 cup chocolate chips
Directions:
Preheat oven to 250 degrees F.
Combine rice cereal and broken graham crackers. Set aside.
Melt butter, vanilla and marshmallows in a large pot over low heat, stirring constantly, until marshmallows are melted.
Add rice cereal and graham crakers. Stir until cooled.
Using lightly greased hands, press mixture into 8" x 8" pan. Sprinkle top with chocolate chips.
Place in oven for 5 minutes until chocolate has melted. Spread chocolate out evenly with a rubber spatula.
Cool until chocolate is hardened then cut into squares. Enjoy!
