You might be asking, "What in the world is yogurt cheese?" Well, I'm here to tell you it is the dairy god's gift to those who love cheese but not the calories that go with it!
Simply, yogurt cheese is yogurt that has had the whey taken out of it. (Yes, "whey" as in "Ms. Muffet eating her curds and whey"...)
All you have to do is buy your favourite low fat yogurt, scoop it onto a piece of cheesecloth, twist it closed with an elastic then place it on a colander over a bowl and set in the fridge. Wait at least 6 hours but preferably over night. What you are left with is a delicious, spreadable "cheese" that you can use on your favourite sandwich or cracker. Add a few herbs, salt and pepper and you've got yourself a yummy dip. And all without the calories of regular cheese! How perfect is that?
