zucchini cakes...another way to get the kids eating green

Here's another fabulous way to get the kids eating more of their green veggies! Quick to prepare and easy to make (you can get the kids to help!), the best part is announcing to all at the table, "We get to eat "cakes" for dinner!"
Zucchini Cakes
Prep Time: 15 minutes/Total Time: 30 minutes. Makes 7-8 cakes.
Ingredients:
•1 large zucchni grated, excess water removed (After you grate the zucchini, you can use cheesecloth, paper towels or simply squeeze zucchini with your hands to release the water)
•1/2 cup freshly grated Parmesan cheese
•1 cup Japanese panko bread crumbs
•1/4 teaspoon paprika
•1 clove garlic, minced fine
•1 egg
•salt and pepper to taste
•2 tablespoons olive oil for frying

Directions:
Combine all ingredients, except olive oil, and mix thoroughly. Form the mixture into cakes.

In a large pan over medium heat, add the oil. Once hot, add cakes and cook until golden brown, about 3-4 minutes per side. Serve with sour cream, plain yogurt or even a little ketchup.
